My Favorite No Bake Energy Balls

If you’ve been following me on Instagram, you know I make an adapted version of Deliciously Ella’s energy bites every couple of weeks to keep me full if I’m ever hungry and need a quick little snack on the go. I discovered my love for healthy cooking last year while living in Geneva and haven’t looked back since. These energy balls are great because they’re so easy to make, only require a few simple & clean ingredients and only involve one kitchen tool – a food processor!  

If you aren’t familiar with what a food processor is, it’s an electric kitchen appliance used for chopping, mixing, or pureeing foods. You can make homemade sauces, dressings, and even hummus! You can also grind your own meat, blend your own nut butters, and finely chop veggies. It’s so incredibly useful and one of the top 3 items I use in my kitchen on a weekly basis. seriously.  If you don’t already own a food processor, you are missing out! But do not fret. ENERGY NO BAKE BITES
2/3 cup any nuts* {I used almonds}
2/3 cup of any nuts* {I used cashews}
1 cup of pitted dates
2 tblspoons of chia seeds
1 tblspoon of cacao powder
1 tablspoon of coconut oil
*Coconut flakes for rolling!

*you can use almonds, walnuts, cashews, pecans, brazil nuts, peanuts or any other nut your heart desires!

  1. Combine all of the ingredients above into a food processor & pulse for 1 minute!

2. Place a small amount into the palm of your hand and roll into a ball.

3. Coat ball in coconut shavings

4. Place in refrigerator in a sealed container to set. Good for up to 1 week! Makes 10-12 balls
